I like to make cakes for friends’ birthdays, and i try to make them seasonal where possible. I made this cake for a friend of mine, born in December, whose housemate ended up eating the majority of the cake. For the subsequent years, I made the cake for him, much to his delight :)
It’s basically a cardamom and cinnamon sponge with clementines on top. You make a caramel which goes in the bottom of the tin and then the clementines and some apricot jam, then the sponge. One year I tried infusing the caramel with cardamom. It wasn’t worth the effort.
I recall telling an ex-boyfriend I was making this cake for a friend’s birthday. He, not well versed in culinary exploits, responded “But why is it upside down?”
