I used to eat this religiously for lunches at the office. I have since chosen to diversify but come back to this often. It is very easy to prep and can be kept interesting by playing with various flavour profiles and textures.
Ingredients
- sweet potato or potato
- chicken thigh
- cavolo nero
- tomatoes
- optional
- something for crunch e.g pine nuts
- other veggies
- other toppings
Method
- air fry or bake your sweet potato/potato
- i like to season the sweet potato with salt, pepper, cumin and smoked paprika
- air fry or bake your chicken thighs
- season how you want. you can go in any direction with this - mediterannean, middle eastern…
- de stem and chop up your cavolo nero
- MASSAGE IT with a bit of olive and lemon/balsamic until it turns a vibrant green. this really makes a difference
- chop up your tomatoes
- if you’re feeling fancy, toast some pine nuts
- any other roasted veggies you fancy are great to chuck in - i love doing roast fennel or roast brussel sprouts
- dress with either simple olive oil/balsamic, or make up a tahini yoghurt garlic sauce, or a ready made caesar dressing is also acceptable
